Grosseto: I butteri

Maremma’s cowboys
Il Buttero (“dal latino boum-ductor, conduttore di buoi o dal greco bùteros: bus, bue e teròs, pungolo”) è un personaggio dall’ alone eroico, che con il suo cavallo, ha affrontato più di ogni altro la natura ostile e selvaggia della Terra di Maremma.
La giornata del buttero cominciava prima del levar del sole quando
si recava ai mandrioli per prendere la cavalcatura che poteva scegliere tra le tre o quattro a sua disposizione.
Il lavoro vero e proprio si svolgeva poi nei grandi recinti dove pascolavano i branchi di bestie da dover controllare, contare, spostare ed eventualmente recuperare nella folta macchia mediterranea che il buttero doveva conoscere a menadito.
Non vi erano giornate facili, ma in alcuni momenti dell’ anno il lavoro si faceva ancora più duro, erano questi i periodi delle “figliature”, della “spocciatura”, della merca e della doma dei puledri bradi.
Oggi il lavoro dei pochi butteri rimasti è molto cambiato ma è sempre e sicuramente al Buttero che spetta il compito di mantenere vive le tradizioni della Maremma

The Butter (“from the Latin boum-ductor, conductor of oxen or from the greek bùteros: bus, ox and Teros, goad”) is a character from ‘heroic aura, who with his horse, addressed more than any other hostile nature and wild land of Maremma.
The day of the cowboy began before sunrise when he went to Mandrioli to take the horse that had a choice between three or four at his disposal.
The real work took place then in large enclosures where grazing herds of cattle from having to check, count, move and possibly recover in the Mediterranean scrub that the cowboy had to know by heart.
There were no easy days, but at certain times of the year ‘s work was even harder, these were the periods of “calving” of “spocciatura”, goods and breaking of foals in the wild.
Today, the work of the few remaining cowboys has changed a lot but it’s definitely the Buttero and that the task of keeping alive the traditions of the Maremma
